Legend has it that the name originates from the unsuccessful siege of Eger by the Turks in 1552, when the heavily outnumbered Hungarians had nothing to drink but red wine. This proved to be to their advantage, their red stained beards and wild eyes terrified the Turks, who thought they had been drinking Bull’s Blood. Connoisseurs consider the red wines from Szekszárd and Villány in southern Hungary to be the cream of the crop. These are: Ezerjó Hárslevelű Irsai Olivér Cserszegi Fűszeres Királyleányka Other varieties of grape that may have originated in Hungary include: Furmint Juhfark Kéknyelű Main white wine regions: Lake Balaton, Mátra, Eger, Bükk, Somló, Pannonhalma, Etyek-Buda, Mór, Ászár-Neszmély and Tokaj. Around Lake Balaton, you will find the Balatonfelvidék, Balatonfüred-Csopak, Balatonboglár, and Badacsony regions. No visit to Hungary is complete without a visit to Europe’s largest freshwater lake, and it makes sense to visit a couple of wine cellars along the way. Hungary’s most famous wine region Tokaj lies in the foothills of the Zemplén Mountains of the far north of the country – in fact the traditional area crosses into the southeast corner of modern Slovakia. The area is notable for its long warm autumns and mists that come in from the River Bodrog, creating perfect conditions for noble rot. This can contribute towards creating the botrytised (‘aszú’) grapes for which the region is famous. Given that aszú conditions only happen in perhaps three vintages per decade, a lot of dry Furmint is also produced. It can only be spoken in the superlative about this wine, as it is a medicine, a real nectar. The name Tokaji (which is of Protected Designation of Origin) is used for labelling wines from this wine district. The location of the region has a unique climate, beneficial to this particular viniculture, due to the protection of the nearby mountains, long warm autumns and mists that come in from the River Bodrog, creating perfect conditions for noble rot. Creating the botrytised (‘aszú’) grapes for which the region is famous. The role of ageing and storage cannot be neglected either. The fungus, Botrytis cinerea covers the grapes and makes the skin of the berries thinner, helping create the perfect harmony of acid and sugar. The world famous Aszú wines are made by adding these berries with noble rot, and the more aszú-grapes the wine contains the more precious it is.
