Description
After destemming wine had been fermented for 2 weeks (on 28 – 30 degrees) followed by a 2 week fermentation sur marc. Malolactic fermentation in stainless steel. Wine was separated into 2 parts, 50% was put into new oak barrels (made by Trust European Coopers) the other 50% was put into stainless steel tanks. After 6 months the 2 parts were blended and put into 20 hl oak barrels for another 6 months.
Moderate aromas in glass, but after a while bouquet is shown. Dominant notes of forest fruit and sour cherry in the nose complemented by roasted aromas from oak ageing. The first sip reminds us sour cherry. Than joyful elegancy of light spices makes the taste richer in content. Its youthfulness is reflected through its (still) harsh tannins will be more rounded in the bottle. A serious, substantial wine needs some more time.
